Convenience food is a lifesaver for times I am tired and uninspired. Even a few years ago, strolling through the vegetarian frozen foods section meant deciding between this “blah” veggie burger and that “meh” veggie patty. Nowadays, meatless ribs, ground “beef” crumbles, chick’n filets and nuggets, faux sausages, and even vegan seafood are just about everywhere. On a whim, I decided to take home some of Gardein‘s “Mini Crispy Crabless Cakes,” and I was not disappointed.
Each package contains 10 nuggets of authentic-tasting, breaded goodness. I mean, I make a mean Tempeh Crab-Free Cake from time to time, but these really did remind me of being at a seafood restaurant. These babies were topped with a homemade tartar sauce of Just Mayo, sweet pickle relish, and a splash of lemon juice.
My only criticism is that I could have cooked them longer. I decided on baking them in the oven (to cut down on oil so I could then drench them in vegan mayo – hello!), instead of the recommended method of frying them up on the stove. They didn’t get as crispy as they could have, so I would suggest keeping an eye on them in the oven and letting them bake a few minutes longer than what the package says for a crispier crust.
All in all, these were wonderful for whipping up a quick and tasty dinner. Would recommend them and would definitely buy them again. What is your favorite Gardein product?
