Vegan MoFo: Shepherd’s Pie with Lightlife Smart Ground!

After a much-needed mental health week and tons of junk food, Vegan MoFo on OBH is back for a day of Autumn Comfort Foods! A while back, the good people of Lightlife contacted me to do a review. I already love their products – especially their Fakin’ Bacon! – and was thrilled at the opportunity to branch out and incorporate more of their products into our meal rotation.


With a packet of Smart Ground on hand, I set to making homemade Shepherd’s Pie – something I don’t think I’ve ever done as a vegan (or an omni). Is there anything better on a chilly fall evening? A hearty casserole of veggies, crumbles, and spices, topped with whipped potatoes? I mean, c’mon…


The casserole element is totally customizable, but I liked this recipe’s combination of onions, carrots, celery, and mushrooms. The Smart Ground itself had a unique taste – different than Beyond Meat or Boca. It had a slight sweetness that was an intriguing detail of the overall flavor profile.


Mmm, gimme those smashed potatoes!

Here’s what it looked like after popping it in the oven! Surprisingly, it was easy to plate – not too watery and not dry. It and a wonderful consistency.


As fall and winter roll on, we will probably be making this dish again! It might be fun to use sweet potatoes one of these days… hmm…
